Conscious Chef Antonio Moore Recipe for
Garden Vegetable Scramble |

Fresh picked garden vegetables marinated & grilled to perfection, combined with cayenne-spiced scrambled eggs. Rolled in a warm pita wrap. Fire up the grill and get started… |

1 ZUCCHINI
1 SQUASH
1 GREEN PEPPER
1 RED PEPPER
1 MED. WHITE ONION
1 PORTOBELLA CAP
One MED EGG
¼ CUP OLIVE OIL
½ TSP SALT
½ Tsp PEPPER
DASH OF CAYENNE PEPPER
SPINACH LAWASH
WASH ALL VEGETABLES THOROUGHLY IN WATER!
1. Slice zucchini and squash into ½-inch coins.
2. Cut peppers into strips.
3. Slice onion thin as possible.
4. Grab the mushrooms cut in 1/2.
5. Combine all vegetables and olive oil in a large baggie.
6. Grill until done (be careful not char or burn)
7. In a med size skillet over low heat, scramble egg until done.
8. Stuff vegetables & eggs in tortilla roll tight.
9. Cut in ½ & ENJOY!!! |
