Pecan Chicken
4 boneless skinless chicken breast
2 eggs (beaten well)
2 cups all purpose flour
1/4 cups pecans ( crushed)
2 T Kosher salt
1 T black pepper
2 cups vegetable oil (or as needed)
Procedure:
mix the flour and pecans together well (set aside)
mix all of the seasoning together (set aside)
mix the eggs well in a bowl (set aside)
add half oil to a nonstick pan heat slowly
season chicken breast with Oppie's seasoning
(kosher salt, black pepper, garlic powder)
dip chicken in egg mixture, then flour mixture
add to heated pan
cook on each side about 6 minutes on medium heat
drain on paper towel
finish with your favorite barbeque sauce and a sprinkle of pecan, serve with mashed sweet potatoes, and fresh green beans. (recipes follow)
Mashed Sweet Potatoes
2 large sweet potatoes
2 T butter
½ cup 2% milk
2 T Kosher salt
1 T Black pepper
Procedure:
peel the potatoes and cut into cubes
place potatoes in a 4 quart pot, with 2 quarts of water
Bring potatoes to a boil and cook until tender about 10 minutes
Drain potatoes in strainer place in mixer, mix until the potatoes are smooth, add butter, salt and pepper, finish with milk. Do not over mix, or the potatoes will not be fluffy.
Fresh green beans
1 pound fresh green beans
1 cup water
1 T kosher salt
Procedure:
bring the water to a boil, add salt then add beans
cook beans 2 minutes then serve. |
