Darlene Smith Recipe for
Chicken Parmesan

Darlene Smith Blueberry BBQ Salmon over Field Greens Picture



          2 pounds boneless chicken breast
1 (36 oz) can crushed tomatoes
2 T Italian seasoning
4 T grated fresh parmesan cheese
4 cups fresh broccoli
2 T Mrs Dash (original seasoning)
3 egg whites (beaten well, place in a bowl)
            1/4 cup vegetable oil
            1/3 all-purpose flour (place in a bowl)
            1 pound Angel Hair pasta or Fettucine pasta

1. Season chicken with Mrs Dash seasoning, dip in egg white and flour.
2. Heat sauté pan, add oil to pan then add chicken breast and cook 5-7 minutes on each side.
3. In a separate pan heat the crushed tomatoes and italian seasoning until well heated.
4. Add chicken to sauce, the serve over angel hair pasta or fettucine pasta.
5. Finish with freshly grated parmesan cheese.
6. Serve with fresh steamed broccoli, just add 1 cup of water to pan, let come to a boil, add broccoli and Mrs. Dash seasoning cover 5 minutes and add to Chicken Parmesan meal.
