1/2 (med) yellow squash (strips)
1/2 (med) red bell pepper (strips)
1/2 (med) yellow bell pepper (strips)
1/4 (head) fresh broccoli
1 cup fresh mushrooms (sliced)
1/2 (med) tomato
1/2 (med) red onion
2 T oppie’s spice
2 T fresh flat parsley (chopped fine)
1/4 cup olive oil
4 cups Angel hair pasta
1. Heat sauté pan, add oil then add red onions, red and yellow peppers cook 5 minutes.
2. Add broccoli cook 5-7 minutes, add spices and parsley.
3. Finish with tomatoes, serve over angel hair pasta.
